Hearty Beef and Bean Ragu
I love to cook...just not every night! This is a little gift to my future self.
Whenever I can, I cook enough to freeze a couple of extra dinners worth. Let the meal cool a bit and put it into freezer bags labeled with the recipe name and the date. Squeeze as much air out as possible and then set it on a tray. Put the tray in the freezer overnight and it will freeze into nice, flat, easy-to-store portions.
Next time you need a quick meal, just reach into the freezer for a healthy dinner that's ready in less than 15 minutes! To defrost, just break into pieces and place in a covered pot on low heat, stirring occasionally. It'll defrost and heat up in very little time.
